We’re having a “Holiday Goodie Sharing” today at work. I got nominated to coordinate it. That’s what I get for suggesting it and not being at the meeting where it was discussed. (Thanks, Kim!
)
I made two different sugar cookie recipes (of which I will share very soon). While I was frosting the 60+ cookies last night if one broke, the “sugar addict” in me ate it. The “be healthy” part of was sleeping I think…

You’ll notice two different shaped cookies… I did that so I could tell the two recipes apart. At least I was thinking ahead – I wanted people’s opinions and that would help… I was thinking clearly… it was before I started eating the frosted cookies!!
I felt a little ill last night. The Offspring was so wonderful to get me a glass of milk. It helped, but I woke this morning SO NAUSEOUS that I thought I might die! After two glasses of Stash Lemon Ginger Tea and breakfast (1 C Cheerios & 1/2 C Fiber One w/ 1 C frozen blueberries) my tummy started to settle down.
Now, jump forward five hours… It was time to have our “goodie sharing”…
I’m on a major sugar overload! UGH! Forgive me while I sleep with my eyes open and pray for my head to quit spinning!

Don’t you just hate it when you go to the store and they don’t have what you want? I buy my peanut butter at Costco and want a specific type. They’ve not had it the last three times I’ve looked. How hard is it for them to carry their OWN Kirkland Organic Creamy Peanut Butter?!?
I recently bought my first “real” food processor. The recipe booklet includes a peanut butter recipe so I thought I’d give it a try. It was pretty simple… well sort of… I made a little mistake…
The recipe calls for 4 Cups of dry roasted peanuts. OK, no problem… I picked some up in the bulk foods section at the grocery store this past weekend. Again, no problem…
The directions say to pulse 10 times and then process for 4 1/2 minutes. Again, no problem… well… sort of…
I set the time for 4:30 and continued talking with hubby, occasionally watching the soon-to-be peanut butter. I was fascinated! Then got this feeling that time was moving really slowly… after looking at the timer a few times I realized my time-warp issue…
My “new” range has a timer, but when one enters 4:30 it doesn’t mean four minutes and 30 seconds… it means four hours and 30 minutes!
Needless-to-say, my first attempt at homemade peanut butter was not a failure, but not a success… It tasted GREAT and was SMOOTH! But, I had peanut soup…
I poured it into my old Costco container (as shown here) and stuck it in the fridge.

I will definitely make this again… being much more careful with the timer! I did find that my “new’ microwave’s timer would have giving me four minutes and 30 seconds. I also have the timer that came with my KitchenAid mixer…
Update:
Homemade Peanut Butter
Serving Size: 16 Yield: 2 Cups (32 T)
Ingredients: 4 Cups Dry Roasted Peanuts
Directions:
1. Place peanuts in food processor with large blade (not disc)
2. Pulse peanuts 10 times
3. Run food processor for 4.5 minutes or until oil droplets appear
Voila! You’re done.
Have you had a similar “timer” issue?
