Ham and Veggie Soup

For Christmas we have a Honeybaked ham, not turkey. This past Christmas, instead of giving the ham bone to Hubby folks they suggested I keep it and make a soup. I thought it sounded like a good idea and knew I needed some recipe posts for my blog. So we kept it.

I hope you enjoy this – if you are vegetarian… sorry, you’ll have to come back for another recipe.

Cast of Characters : Ham bone, onion, carrots, whole bay leaf, Bob’s Red Mill Veggie Soup, Ground Black Pepper, Water

Place ham bone, scraps and juices in dutch oven.

Coarsely chop onion and add to dutch oven around ham bone

Add carrots

Add soup mix and pepper

Add water; amount varies. Ensure ham bone is covered.

Place cover on pot and cook on stove top for three hours.

Check soup periodically (hourly) and stir.

Soup is done when meat is falling off bone.

Yield: 7 quarts

Ingredients:
1 Ham bone, approx 9 oz meat
1 whole onion, chopped
1 pound carrots
3 whole bay leaf
28 ounces Bob’s Red Mill Veggie Soup MIx
1 dash Black pepper, ground
3 quarts water

Directions:
1. Assemble the Cast of Characters : Ham bone, onion, carrots, whole bay leaf, Bob’s Red Mill Veggie Soup Mix, Ground Black Pepper, Water

2. Place ham bone, scraps and juices in dutch oven:
