As I have often discussed the Oregon rainy winter skies SUCK. I HATE the dark dreary days. This is what I saw when I tried to look out our front window on Sunday.
YEP⦠it was raining so much that the windows were streaked with rain. UGH! All I wanted to do was curl up in a ball in front of the fireplace. Well⦠we donāt have a fireplace! š
Instead I watched Pioneer Womanās Food Network show on our DVR and she talked about fixing meals with stuff she had around the house. I realized I had some food that I needed to use or soon would be tossing.
I also was in āWhat would my mom make if she was here?ā mode. Mama lives half a continent away so she could not come over to pamper me. So instead I decided to make just what I knew sheād make⦠potato soup. Actually, I deviated We like garlic quite a bit and I still had leftover Roasted Garlic so I decided Iād add some so to her recipe. You could use diced or minced garlic.
Cast of Characters: potatoes (about 8-12 potatoes, I used yellow and would have used more but didnāt have enough), onion, parsley, butter, water, salt, pepper, butter, Roasted Garlic, milk and cream (yes, I know I have half & half in the picture; itās what I had on hand). Mama adds ham, but I donāt really like ham in my potato soup ā
Hubby and The Offspring do, but I didnāt have any scraps leftover so I skipped it.
In a heavy pot, sautĆ© the onions in butter until they are translucentā¦
While the onions are sautĆ©ing, dice the potatoes into bite-size piecesā¦
After the onions are done and the potatoes are chopped, place potatoes in the pot and if desired roasted garlic (I added 3 tablespoons ā if garlic upsets your stomach or causes ādigestive distressā donāt use this much).
Add 2 Cups of water, or enough to just cover the potatoesā¦
Add a couple pinches of saltā¦
⦠and pepperā¦
Add a handful of parsleyā¦
Stir and bring to a rolling boil. Then turn down to a slow boil or simmer for 30 minutes.
Stir occasionallyā¦
After potatoes are soft when pierced with a fork, add 2 Cups (pint) cream (or half and half) and 2 Cups of milkā¦
Taste and add more seasoning as desired⦠I needed to add more pepper.
Stir and re-heat to a gentle boilā¦
Grab a bowl and enjoy⦠YUMMMMMMMM! (Mama, the Roasted Garlic was an awesome add!)
