Popcorn Cake

Cast of Characters (sorry, I forgot to get a photo):
4 qts Popped popcorn (I use air popped)
1.5 C salted peanuts
10 oz peanut butter chips
        and/or 16 oz Reeses Pieces
        and/or 16 oz M&Ms
1/2 C butter or margarine or Smart Balance (I use Smart Balance)
1/2 C oil (I use light olive oil)
16 oz mini marshmallows

Pre-grease pan (either an angel food or bundt or two loaf pans). As you can see, I chose to do two loaf pans.

In a large bowl, mix popcorn, peanuts and peanut butter chips and if desired Reeses Pieces or M&Ms.

Combine butter/margarine, oil and marshmallows in pan. Heat until marshmallows are melted.

Pour melted marshmallow mixture over popcorn mixture. Stir/fold until popcorn is well coated.

Pour contents into pan(s). Let Cool. Cover cake after cool.

I usually only fix this at Christmastime. Not sure why, maybe because of all the fat and sugar… I have made it for special occasions (friend’s birthdays). I made it last night since kitchen remodel phase one is over and I like making treats for the guys working on our remodel. I also owe my good friend Dude (aka Dude) goodies for his belated birthday gift. See, Dude, I haven’t forgotten about you. πŸ˜‰
